Pumpkin Seeds Are Nutritious and Delicious!

As Halloween has passed, it's a good time to purchase pumpkins, often at a lower price! Don't toss the seeds  - try this simple and delicious Roasted Pumpkin Seed recipe.

Pumpkin seeds are a nutrient-dense snack, providing healthy fats and several important minerals. Made up of mostly fat and protein, pumpkin seeds provide satiety, or the feeling of fullness and contentment. Their high magnesium content may promote blood sugar and blood pressure management. Pumpkin seeds are also rich in zinc, phosphorus, potassium and selenium, making them an anti-inflammatory food.

Ingredients:
  • 3/4 cup raw pumpkin seeds
  • 1 tbs olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1/8 tsp black pepper
Instructions:
  1. Pre-heat oven to 385°F.
  2. Wash pumpkin seeds in a colander, removing residual pulp with your hands.
  3. Dry pumpkin seeds on a paper towel or in a salad spinner.
  4. Coat the pumpkin seeds in olive oil.
  5. In a separate bowl, combine salt, pepper, garlic powder and paprika.
  6. Toss the seeds in the spice mixture, ensuring an even coating.
  7. Spread seeds out onto a parchment paper-lined baking sheet.
  8. Roast seeds for 15 minutes, stirring every 5 minutes to ensure even cooking.
  9. Allow 5-8 minutes for seeds to cool before eating.
