Safe Plates Home Food Preservation Series Registration

If you are new to canning and home food preservation or have questions about safe techniques, join us the next several months for this series! Simply scan the QR code for each class you'd like to sign up for. Payment to the host county secures your spot in the class. You can drop off/mail payments at the Catawba or Lincoln County Center, as long as checks are addressed to the correct hosting county.

Intro to Canning (hosted 10/10/23) is a pre-requisite for the rest of the series. If you missed it, reach out to jsramire@ncsu.edu. It is not too late to participate!

Intro To Canning and Q&A

Tuesday, October 10th, 5:30-7:00 PM Cost: Free Location: Lincoln County Center Participation in this session is required for participation in any of the following hands- on canning classes. This session cover the basics - equipment, supplies, and safe procedure for canning low and high acid foods

Boiling Water Bath Canning

Tuesday, October 24th, 5:30-7:30 PM Cost: $20 Location: Lincoln County Center Register by October 20thIn this hands-on class, you will practice boiling water camming by making apple butter. Boiling water canning is a great way to preserve high acid foods, like fruits and pickled products

Pickling and Canning

Tuesday, November 7th, 5:30-7:30 PM Cost: $20 Location: Catawba County Center Register by November 3rdIn this class, you will learn how to acidify vegetables by making a brine. You will practice by making a pickled corn relish using a boiling water bath canner. Other methods of pickling will be covered in class.

Intro to Pressure Canning

Tuesday, December 5th, 5:30-7:30 PM Cost: $20 Location: Catawba County Center Register by December 1stLean the basics of safely pressure canning low acid foods in this hands-on class. Not all foods are safe for boiling water bath canning, i.e. vegetables, meats and starches. Join us as we pressure can potatoes, which are perfect for making potato salad!

Pressure Canning Meats

Tuesday, January 16th, 5:30-8:30 PM Cost: $30 Location: Lincoln County Center Register by January 12thPreserving meat through pressure canning can sound intimidating, but this class will allow you to become comfortable with the process. Pressure canning is a great way to preserve venison and other wild game without electricity use.

Intro to Fermentation

Tuesday, January 30th, 5:30-7:30 PM Cost: $20 Location: Catawba County Center Register by January 26thIn this class, you will learn the health benefits of fermented foods and beverages; and how to safely make them at home. You will practice by making your own kimchi and leaming how to make sauerkraut.

Freezing & Dehydrating

Tuesday, February 20th, 5:30-7:30 PM Cost: $20 Location: Lincoln County Center Register by February 16th

Not all foods are safely preserved through camming, Freezing and dehydrating are two other methods that will allow you to safely preserve food. Many herbs, fruits, vegetables and means can be frozen or dehydrated. Come learn more in this class!
